Question by palebeauty: What are the best Hostels to Stay in Europe?
Any reference Sites you find to be more helpful than others? DO reservations really make a difference? What should we know about hostels before booking one?Is there a discount for american college students? A discount for military or couples?
These are the countries we plan on staying in:
Czech Republic (Start and end) Spend 2 days
Germany Spend 3 days
Amsterdam Spend 2 days
Belguim Spend 1 day
Paris Spend 2 days
Switzerland Spend 1 day
Italy Spend 3 days
Austria Spend 1 day
End up in Czech Republic.

When it comes to hostels, no two are ever really the same. I would recommend that you use a very good search website like http://www.hostels.com to see the reviews before you book a place to stay.
I would also recommend you look at http://www.hihostels.com/ – these are for hostels that are members of the Hostels International. You will not find them on the hostels.com site, and you need to have a HI membership in order to stay there, but they may offer you great options in some of the places you will be staying.
Reservations can absolutely make a difference, especially depending on when you are travelling. Remember that July and August are the busiest months, and all the best places will be booked up weeks in advance. The places that have great ratings but are still not that expensive may also book in advance at other times of the year… notably in large cities like Paris.
I never encountered a student discount. That being said, if you have an ISIC card you might be able to get a discount at one or more places. No, there will be no military discount. As hostels are booked on a per-bed basis, you will not get any discount for travelling with more than one person.
By the way, if you want specific recommendations of hostels to stay in, I would suggest that you be more specific in your listing of where you are going. Although you did list “Paris”, the rest of your list will need to be narrowed down to the cities/towns that you will be staying in unless you want a list of the thousands of hostels in each country.
As a last note… if you are travelling as a couple, sometimes it is nice if you can have a private room every now and again. Many hostels do have a private rooms, but they will be more expensive than shared dorm rooms. Presuming you will be travelling as one male and one female, make sure that you note the difference between booking two beds in a co-ed room, or booking one bed each in gender-segregated rooms. The hostels.com website above is very good at listing what kinds of rooms each hostel has so you may choose from it.
If you do wish to be having a private room, the odd time a hotel can be just as cheap. For Paris in particular, accommodation is very expensive (even in hostels) unless you manage to find a good deal. When I went, we managed to get a great rate on a private hotel room using the Paris Convention and Visitors Bureau website at http://en.parisinfo.com/ – there always seems to be a few hotels offering pretty big discounts on that website.

Its not easy to tell you which are the best hostels in Europe coz there are many types of hostels and various brands to choose from. I have not personally stayed at any hostel in Europe. But I did some research and found some useful information.
